How do I get oil stains out of wood without sanding away the grain?

TSP and oxolic acid will lift the stains. The wood will swell and require a light sanding to smooth raised grain. Hand sanding does the best job. Power sanders that are orbital leave little circles.

If the stain is fresh use talcum powder to absorb the oil, gently rub the powder in with your finger then rub off with a cloth.
