I replaced a 30 gal gas water heater w/40 gal - problem: water pressure in kitchen is low.?

When the new water heater was installed it loosened a bunch of crud in the pipes. This crud is not stuck in the aerator of your faucet.
You simply need to unscrew the aerator and clean it out. Just in case you don't know what the aerator is here is a picture of it and how to remove it.

the water heater should have nothing to do with this, pressure should be constant, since it is controlled by your faucet.. this would be true even if you added a million gallon tank water heater.ie you open the faucet and only 1 gal/min comes out only one gallon is emptied only one gallon can come in... the size of the heater is irrellevent..have the plumber that installed your heater check your valve lineup to see why this is happening
I really doubt the Water Heater would affect the water pressure.
Is it both hot and cold water pressure reduction?
Cobra gave you a great answer. He got my vote. The water heater has no effect on your water pressure. The pressure will be the same no matter what. You may be confusing water flow with water pressure. If this is the case then one of your pipes could have been reduced in size by a solder joint, a union. or a reduction in the pipe diametor. I can,t give you an exact answer without looking at the system.
you might try something simple like checking the aerator for debris, located on the end of the spout. next see if debris is caught in the valves. if it is the same low pressure on hot and cold it may very well be debris in the aerator.Good luck!
I live in a high water mineral content area; each time I turn off the water I must clean out the air-e-atore (Spelling?). The removable round thing the water flows out of. You may need to get a set of pliers to take it off. MAKE SURE you put something around it, like a rag, before you grab it with the pliers or you'll badly scratch the metal.
Clean it out then put it back on hand tight, so you won't need the pliers next time. The rubber "O" ring (seal), may turn your finger black. It will wash off, but it is time to replace it next time you are at the hardware store.
make sure the valve under the sink is turned all the way open.
