You may have air in your water line.

You could have a loose water pipe which would need to be secured. you may have a loose washer in your kitchen faucet which you would have to disassemble the faucet and tighten up the washer or if you have high water pressure you could install a water hammer arrest-er under the kitchen sink.
The technical term is 'water hammer'. It occurs when a valve (or faucet in this case) is turned on and off suddenly.

This can be easily remedied by installing a water hammer arrester in your plumbing system. A local plumber can do the job at an affordable rate.
it's correct about air in lines asolution is to turn off main water supply , then open lowest and highest outlets let water drain alittle then close outlets and turn on watersupply then open upstairs kitchen sink taps until excess air is released from line (this procedure should allow air into the air cushion pipes in your plumbing system) if it does not cure the problem the cause may be the lack of a "cushion" in your upstairs plumbing you may need a plumber to install an add-on fitting on the sink valves
