the answer depends on your application. for building kit-robots a cold heat soldering iron will work, and are very safe for beginners. here is one from thinkgeek:

however for anything more intensive, you will need your basic run of the mill soldering iron, available at home depot or local hardware stores for less than $20.

For plumbing work you actually don't even need the iron, you simply torch the copper and then apply the soldering strip to the hot pipe.

There is a new product available called "cold heat" soldering iron. It doesn't heat up until you try to solder, then heat is instant. it cools off as soon as you put it down. very safe , practical and no muss and fuss like a conventional soldering iron

Weller is one of the better known manufactures of soldering irons. If you plan to be working with sensitive components, I recommend a temperature controlled iron.
The cold heat irons are useful also but take a bit of practice to use correctly. They're main advantage is their cordless portability. Most places sell them for $19.99.
I own both a temperature controlled iron and a cold heat one. For extended use, I like temperature controlled iron.
Whatever iron you pick, practice using it before taking on a soldering project.
