How long will the odor last from our newly installed cellulose insulation?

Question:The odor is kinda of like a mild ammonia smell and is only noticeable when we're running the a/c.

It lasted in my house for about 3-4 weeks, but it was during the cold weather and it smelled when the heater turned on. Try putting a filter mate on your ac filter, they are about $1.99 at home improvement centers. The cinnamon and the vanilla one really smell nice and will obscure that ammonia smell until it dissipates.
