Mortar matching can be dependant on several things, aggregate in the sand, type of aggregate, lime content, etc. If you are doing a large area experiment with mixes first before you apply too much and it dries to a different colour.
Your local independent ( normally been around some time with local knowledge) building merchant may know the local mixes.
