Question:lately, and the house isn't cooling well during the day. We also keep the ceiling fans running all day and night. How many windows should I leave open, how much, should I run it on high speed, any other suggestions? Thanks.

Evap cooling is the same as AC as I am sure you know. It does not reduce air temp by a mechanical means. It does feel to you body like it is cooler air but nowhere near like air from central AC does. My guess is that the outside temp is over the mid 90s and even at 20% humidity you are not going to be real comfortable.
High speed will help some. It does move more air but if the air is quite hot (95+) it is not going to help much. The only real good answer is central AC which is quite expensive to install and run.
