Why do kitchen doors not have locks?

If there is a fire in the kitchen, you don't want a locked door preventing you from putting it out.
Who'd want to lock themselves in a kitchen ? - unless of course you're witch wanting privacy to brew up some obnoxious brew :-)
On second thoughts maybe you're like my first wife who spent a lot of time trying to make custard that moved about (unsuccessfully I might add).
