When the air conditioner is running, for every bit of cool air that comes in through the vent some warm air has to leave the room, otherwise a slight amount of air pressure will develop in the room. Having the door closed will restrict air flow out of the room. When this happens the air in the vents will encounter resistance to flowing into that room and tend to flow out vents in other rooms instead. This will also cause a little additional wear and tear on your HVAC blower as well.

What happens is that even though each room has air vents in it, the vents that are the furthest away from the air conditioning unit do not get as much air going to them as the ones that are closer to the AC unit (less forceful air coming out). If you leave all the doors open then a room that is hot and a room that is cold will even out to a comfortable temp over all.
If you keep the doors closed the air in the bedroom will pressurize the room and slow down the air coming from the ceiling diffuser thus reducing the cooling capacity.
