When you want to set a water tank,why do you need to put it higher or at the level of the roof tops?

If you want to feed the taps by gravity put it high up, but best practice is to use a small header tank in the roof space with a larger underground tank and pump the water up to the header, this way you can use rain water rather than mains water.
Because water will gravity feed to any source in the building without being under pressure or with use of a pump. The pressure will be really low so don't expect any exhilarating showers anytime soon, also some put a tank of water outside so the sun will heat the water in the tank.
