A really large range of fruit and veg can be planed provided you get the conditions right. The Victorians were the masters of growing veg out of season through simple technology and manipulation of both plant genetics and growing conditions. You can provide many of the conditions required easily, such as water, nutrients and the correct temperature by controlling the conditions in which the plants grow, but what is often forgotten is day length. If you get all the other conditions right you can still fail at winter growing because of a lack of daylight - you have to trick the plants into believing it's not winter or only grow plants which yield crops in autumn or winter. Probably all seems a bit vague and I would be able to show you more 'in situ', but hope it helps a bit.
