Your lucky. I love Rhubarb, fresh, pie, jam. it is soooo Awsome.
When the stocks are about the size of your thumb at the base its time to pick.
you can harvest it anytime you want but the best rhubarb is when it's about one inch in diameter. After this it begins loosing its tenderness.
Are you in the UK? if so pick anytime up to the beginning of July. After that leave it to build up for next year. Small stems are more sweet and tender but obviously the yield is less.
My Grandmother used to cut the stalks when they were alittle bigger than the circumference of her thumb and a bright red.
She said much larger than that and it would effected the taste. I never knew what exactly she meant by that.
