Cookware question?
Question:I was thinking of buying a copper set of cookware.
Does anyone in the food industry know much about them? I heard they are very long lasting and dependable but are rather expensive. Any negative things about them? Recommend a good brand? Price range?

they're hard to keep clean ( keeping them polished in a full time job and they tarnish easliy) They conduct heat well, but without a non stick surface, food might burn a lot, so you end up using a lot of oils and butter.
Some people are allergic to copper, so if you cook a meal for people, you might want to make sure they aren't allergic to copper. (yes copper does come off in the food, like cast iron.) Also...if you have a ceramic cook top, copper is not recommended to cook in. (neither is cast iron...they aren't completely flat bottomed)
I'm not in the industry, but you can't go wrong with Paul Revere Copper bottom cookware. My mom used them the whole time we were kids, and they always scrubbed up nice and shiney.
I have only one, but I use it for everything. With copper, you can cook on lower temperatures.
