Answers:
Ok first when you are picking them, you must cut them from the lowest part of the stem from the ground. Make sure that you throughly wash them using a clean dish towel or wash cloth with warm or hot tap water. Next you separate the leaves from each other and make small stacks. You roll each stack and cut the leaves into slivers large or small which ever suits your cooking style. When it is time to cook, you can fill a large cooking pot 1/4 to 1/2 full of water, add about 1/4 of distilled vinager for taste and either a cured turkey neck bone or a cured ham hock for taste. Add the greens and let the water come to a boil and then simmer and cover. Let the greens simmer for about an hour or two while keeping check on the water level to prevent scorching.
If you want to store the greens, you cut them the same way as above and you can either put the greens in a freezer ziploc bag and store in th freezer or you can quick freeze them by using the basic blanching techniques and then bagging and freezing.
They are like turnip and mustard greens. Pick them before the leaves get huge and if they do you need to strip the middle out or it will tough. to freeze you need to cook them, let them cool off and put in freezer bags. They are easy to cook,I put some seasoning in mine and let them boil till tender about 35 or 40 min. Taste to make sure they are done.
