I'm not sure if I understand your question. I f you are referring to harvesting vegetables it is because once they 'go to seed' they toughen up. I f it is a flower, simply clip off all flowers (deadhead), and your plant will continue to bloom. Otherwise it considers itself finished for the season and goes to seed. Does this help?
