Is there a way to "revive" old potatoes?
Question:I have several bags of old potatoes in my closet with eyes growing long enough to come under the door and into the kitchen. If I were to plant these old potatoes in dirt outside, would they regain nutrients from the soil and "revive," becoming once again edible?

No, the individual potatoes will not revive. In fact, when a potato starts growing eyes, it also releases a chemical in the flesh called solanine that is somewhat toxic and not healthy to eat, so you should not consider eating those individual potatoes.
What you can do is cut the sprouting potato into plantable pieces, with one eye/sprout per piece. Once planted, they will eventually grow into a new potato plant. BUT, in order to avoid disease that will ruin your whole crop you are supposed to plant certified "disease free" potatoes - and grocery store potatoes are not considered certified.

Yes they would, provided they have enough time to mature. Cut them into sections with plenty of potato left to nourish each eye and let them dry for a day. Plant them. Even if ther is not enough time for them to mature, you may enjoy "new" potatoes. (Small potatoes that are delicious with other fresh vegetables.) If it it is not real hot where you live, plant peas at the same time, as new potatoes and peas go very well together.
