When it's big enuf to slice & eat! They don't get ripe, per se, they just get bigger. I once found one under some really big leaves that I'd forgot to peek under and Voila, there was the great grand-dad to be sure---probably 20" long and ugly with it, but it made a dandy one-dish meal stuffed with various things too numerous to mention.
They can be eaten at almost any time, they get kind of strange when they get too big. They don't really get ripe.
They're usually good to go at about 5" or 6" long; but if they get humungous-like 15" or 16" they get pithy (having huge seeds) and grainy.
