The non-stick part (TEFLON) is actually very toxic, and can be detrimental to your health if you continue to use a pan whose teflon is shredding.

I think you should be throwing away the old teflon pans, and reverting to non-stick cookware that doesn't use chemically bonded surfaces. I pulled this link...

It should be noted that I have no personal experience with the Scanpan products. I have a set of stainless steel frying pans that I seal each time before usage by heating them up with a film of oil coating the bottom, until the oil smokes, allowing them to cool down completely, then using them like normal. (That is, reheating them before I use them.)


I wouldn't use them, they have been proven to cause different diseases and what ever you do noever let one burn on your stove top. They emit poision fumes.

Once a teflon pan shows damage it should be discarded. There are no effective means to keep the coating from flaking into food.
