Steel for sure. Aluminum reacts if you cook acidic foods in it. Also, aluminum is linked to various neurological and brain diseases, such as Alzheimer's, ALS, and Parkinson's. Cooking acidic foods and leafy vegetables in aluminum cookware causes the Aluminum to leach into the food. If you dont want to take any chances, use stainless - it doesnt leach metallic flavors and stuck on food cleans up fine if you use a scrubber. If you decide to use aluminum, get anodized versions and discard at the first sign of pitting or scratching.
