Well, the best way is turn the heat down!! You may want to call the gas company and have them check it out, unless you know for sure you just have it up too high. Just be careful not to burn anything else besides your food, like your home!
Burning food may be caused from a poor working stove, or it may be from the type of pans you use. It's very hard to cook in lightweight cookware. Heavy pots are a little more expensive (or a lot) , but they do make a huge difference. I finally decided to put some money out for a "good" set and I can't believe the difference. I make everything from cream sauces to jams without any problems.
Cook at a lower temperature and watch the food. Actual burning takes a while so you must be going to watch TV while leaving the food on the stove. Same thing would happen with electric stoves.
