Do you put blockwork in between steel ibeam columns in walls?

You can do that. I assume by blockwork you mean CMU (Concrete Masonary Units) or what most people refer to as cinder block. More often I have seen it facing a steel column support system. It should be engineered. If you are in California it has to be stamped by a structural engineer to meet seismic codes.
