Does anyone else have an answer as to why my spinach has turned yellow over night?

Do you mean the stuff you are actually growing or the stuff in the fridge?

If it's in the fridge, I'd say it was E. coli O157h7 (that's the toxic strain, by the way. *Most* E. coli is harmless...) Otherwise, it's probably a fungus..

If it's in the ground, I'd say fertilizer burn. Maybe a dog urinated on it...
