Does anyone else have an answer as to why my spinach has turned yellow over night?

Might be someone used Roundup within 2 miles on a windy day

Do you mean the stuff you are actually growing or the stuff in the fridge?
If it's in the fridge, I'd say it was E. coli O157h7 (that's the toxic strain, by the way. *Most* E. coli is harmless...) Otherwise, it's probably a fungus..
If it's in the ground, I'd say fertilizer burn. Maybe a dog urinated on it...

It is still kinda cold at night - could have got a touch of the frost. Orrr, you are watering it too much.
