What make of kitchen knife would you recommend?

Most professionals use Sabatier. I have Sabatier knives that I have used every day and they are now 30 years old and still good.

I use Global, expensive but totally worth the money.
But then I am a professional chef and I use them for work every day all day.
And I use them because I find them comfortable in my hand., not because of the price!!If its just basic kitchen knives, use what you feel most comfortable to use.

Can't imagine why you've been advised against stainless. I've had a couple of Kitchen Devil knives for years and they are still going strong.
Get over to ASDA and get whatever they've got. I guarantee it will cut things!
I have been using my Zwilling stainless steel knives for over 30 years. A professional knife sharpener can sharpen them for you, if you do not have the hang of the sharpening steel.
I agree with Charlie, I've had a set of Sabatier knives for years and they are still like new,well worth buying.
