It ventilates the room-It helps if there is no window...So that way mold does not develop...Water is bound to get in places in the bathroom. Also, some people like it to dry off when you step out of the shower, or to get rid of all the steam.
While it does help with odors, the real reson is to evacuate the humidity that a shower or tub generates. Water moisture does a great deal of damage to drywall (especially the ceiling) in a bathroom.
If you don't have a fan, you should invest in water resistant drywall.
The main reason is to remove the build-up of steam from when you shower.
