Would it be better to build the ground up with sand or dirt ( for levelling ) when laying a patio ?

1/2" crush with sand
I would use sand. By using sand you are going to get better drainage and less change of weeds coming up through the cracks.
Dont use sand it will move too much. Use something heavy and course like gravel and dirt combined. If the patio is tiled, use sand between tiles to allow for movement.
6inch crush and run then sand
Sand and gravel mixture. Allows for leveling and good drainange plus strength.
