Potato plants have blown over in the wind should they be left or staked and held upright?

Leave them alone. They will be OK.


Just brush up more dirt around the plant. You have to keep dirt around the plant. It is called hilling potato's.
They will right themselves unless the wind is persistent. I wouldn't drive a stake anywhere because you may already have young potatoes in the ground.
They'll still keep growing if you leave them, but when the weather gets a bit humid, you'll find they're more prone to blight (because the air can't circulate so well).

You could try staking them, but be careful not to stick the canes through any potatoes that have formed. Or you might be able to put some bean netting up along each side to help support the stems.
Dont let the soil dry out,dont stake them,and you should enjoy a lovely home grown potato in a few weeks time.
Sounds to me like you haven't hilled them. Hilling should be done when the plants are 4" above the ground. Every time they grow 4" they have to be hilled. This is why I don't grow potatoes. They're not worth the time and effort.
