If you want a really good fast growing plant that will act to anchor exposed dirt quickly, there is almost nothing better than Kudzu vines.
But I warn you...they WILL try to take over.

Depending on the soil...try putting down some peat/manure mix and you could effectively look at many different types of ground cover on many different lawn and garden sites...from grass to treefoil...whatever. The peat retains moisture and provides nutrients.
There are lots of choices when it comes to ground covers, depending on your particular location, soil type and whether it's sunny or shady.
