Around 600, generally speaking. Any higher than that, and you aren't getting a "true" thread count. At 600, you are generally getting an industry standard sized thread. In order to fit 1000 threads into a square inch, you must use smaller sized threads. Not to mention that when you have that dense of a weave, air has a harder time passing through, and you get heavier, hotter sheets. A true thread count from 400-600 tends to be the most comfortable, breathable, low-wrinkling thread count for sheets.
