To strip a model due to yellowing, do you strip the paint off or just the decals that have been clearcoated?

It's been my experience that you have to strip the paint too. I have a Saturn V and Saturn IB and both of them were a yellow- white instead of the real white that they were. These were probably 25 years old. When I took the decals off they disintegrated and the rockets were still yellowish. I took off the paint and repainted them white with black markings and I found a place on-line that sold decals (but I can't remember the name of the place). When I was finished the final product looked great.
