Does anyone know what the Z often found on barn doors stand for?

if you look at the door in more detail you will see that the hinges are fixed are on the side where the angled piece timber or the shape of the z as you say are at the lowest point and project up towards the top horizontal piece of timber
this forms the shape of a triange which is the strongest shape you can make giving the door the maximum strength to stop it from sagging on the opposite side of the hinges and catching on the ground below
the same principle applies to a five bar gate in a farmers field

Well, yes, it does appear to be a Z. In reality the Z is simply the way the barn doors are made. The 1x4 boards are put on top of the flat door to keep the whole door strong, keep it together, and prevent warping.
The Z is put on the doors to tie the boards of the door diagonally and across the door. This type of bracing is used in many projects.
