what is the plant infested with caterpillars? i'm sure that is a larval host plant, and you should be thankful for that bec soon you'll have a lot of butterflies around! do'nt get sad that your plant has been defoliaged by the caterpillars, when they have grown into butterflies, your plant will grow new leaves again. you can prune it and you'll have a new, healthy plant.
poor caterpillars.. don't kill them, let them be butterflies and beautify your garden.. oh, i forgot.. the caterpillar ruin your plants and you get pissed off is it?

There are certain bacteria and viruses that can be released in infested areas, which prey on insect pests and kill them off. The variety of bacteria depends on the variety of insect pest you want to get rid of.
Other remedies are cayenne pepper and garlic, which are repulsive to some caterpillars.
It really depends on what variety of caterpillar you have, though. Check with your local gardening center to find out what you have and what works.
Do spare a few of the little guys, though. They grow up to be butterflies, and butterflies are nice, and important pollinators.
Shoot them off with the hose maybe.
