You can pick at anytime, the smaller the more tender.
When they are a normal size there ready, I think about 3 weeks, don't let them get to big, or they will be tough. You can always test them, just take one off and clean it and eat it.
At any time they reach the size of those you see at your supermarket.
But it's better to err on the side of "too small", as they will be absolutely delicious eve raw in salads.
Don't let them get from tubular to flat, they won't be any good.
