If you want a fast growing, low maintenance, drought and frost tolerant privacy hedge that looks fantastic and will grow well in South Australia then I highly recommend you buy a clumping bamboo.

I grew bamboo privacy hedge because there is a row of town houses up the road and they could see straight into my home and entertaining area. Now they can't see a thing

The variety of bamboo I have is called Bambusa oldhamii. It grows up to 10 metres tall. I bought my bamboo from Bamboo World. They are in Australia and deliver anywhere around the country.

I live in Sydney so I phoned them and explained what I needed. They were very helpful and I couldn't be happier with the result.

I believe that a dogwood may be a good choice.
given the drought conditions in Oz you need to plant native species which will withstand the conditions.something like Lillipilli, or one of the Wattles will make a good hedge if trimmed well. Buxus (Boxwood) is also a good choice and all of these grow quickly. i used to live in Melbourne and remember a few nice Box and Wattle hedges growing in the street i lived in.
Something fast growing and bushy, Ask you local nursery, they will know whats best for your area...
Italian Cypress could fit the bill and they don't need a ton of water once established. They can be planted close together but they are shallow rooted and strong wind can knock them over.

Bougainvillea, while not a tree, grows quickly, has colorful bracts and can cover a fence in a season or so. Ours is 5 meters in height and easily 7 meters wide.
Whatever tree you plant, you will be waiting for quite a long time for it to grow sufficiently to conceal that extension! If you want to block the view in a real hurry, why not consider putting a lattice trellis on top of the fence? This would immediately take the "edge" off the outlook, and you could then grow a pretty creeper on it to soften the outlook. I would thoroughly recommend something like Chinese Star Jasmine - fast growing, very pretty and beautifully scented; but does not get out of control like the old-fashioned jasmine.
