Can you freeze Fresh Corn off the stalk?

Yes you can. Just cut off both ends of the cob, leaving the shucks on, and put it in a freezer bag and freeze it. It is a very simple process.
When I was growing up, we froze hundreds of pounds (over the years) of fresh, uncooked/blanched corn that was husked and de-silked. We froze them in ziplock freezer bags, and later vacuum-sealed bags. Worked great.
You can, but it is much better if it is blanched first. I have been a corn farmer for 47 years so I know a little about it.
yes keep the husk on and just throw it in the freezer. take out thaw and put in the microwave with the husk on. great.
