How to prepare green chili peppers?


Question:My boyfriend has grown green chili peppers this year and when he uses them, They just don't seem to have the flavor we are looking for...Not real hot or flavorful. How do we prepare them after they are picked and how would we can them to use at a later date?

Answers:
The heat of a pepper usually depends on the ground and conditions they are grown in. There isn't anything you can do to increase the heat that is there. As far as keeping them, they dry quite well, and they will also keep if you put them in a bottle with some white vinegar and use it for pepper sauce for months.


Wash them well. Let them dry on a towel on the counter. When they are completely dry put them in a ziplock freezer bag and put them in the freezer . whole. I do this with jalapenos every year. When you need some, just grab what you need, reseal the bag, and back in the freezer it goes. I use them for salsa, chile verde, pizza, poppers, or whatever.
