Just before the capsules break open. One friends makes litte bags that she slips over the ripening head so she doesn't loose a single seed. If you aren't that...dedicated...just feel the seed capsule and guess just before it's ready to open. You can dry it the rest of the way by setting it on paper away from drafts..like in the house or garage.

when u see any of the seed pods open, just collect the rest(open or not), put them a pan ot paper towel to dry, then put them in an empty container for safe keeping, they can be stored in ur fridge till ur ready to plant em!
