You can pick them when they are green. . . they will still be hot! I usually wait until they turn orange, unless you have the Carribean Red Habenero, in that case I would wait until they turn red. Enjoy.


You can pick habaneros green but I would wait till they turn orange, we pickle ours, here it is a year later and they have not lost their heat or their beautiful color!
