Ideally it would be good to prune back your canes when the fruiting season is over; but I had 138' of black raspberries growing on my back fence, and when they got overgrown (which was every year) I trimmed away where and whenever they were a pest. Actually trimming down the canes got me bigger berries and thicker canes.
go ahead and trim them. It would be very impressive if you can kill blackberry. My only recommendation, trim no more than 2/3 of the plant...Also maybe some extra water...
generally they shoud be cut back in the fall of the year but...They continue to multiply.
