when the tops brown up.Pull them when you know it is not going to rain for a few days.Leave them tops attached out in sun to cure.
When the top growth begins to die back they are done growing. If you want large heads remember to never allow the plants to set seed. I cut the top growth back in June. Also the larger the clove you start with the better the head.
