Which veggies are ok to eat young?
Question:I'm starting an organic container garden and the veggies are very close together so I thought I'd just grow them small an eat them young. I've got brocolli, beet, spinach, zucchini, carrot, radish, gr onion, cabbage and kohlrabi. It's ok to eat them very small right?

The onion are definately a great treat early, the others I would think should be left to maturity. (don't know what kohlrabi is, so no comment)

Yeah, carrots are good young...I would imagine they all would be, except maybe the zucchini?
You won't get broccoli heads if you pick the plants very young, just leaves. Zucchini get big even if you pick the fruit young. But young zucchini taste great. Beets, spinach, carrots, radishes, and green onions are all great young. So is kohlrabi. I don't know about cabbage, though. It won't hurt you to eat any of these young, but you might want to let some of them mature cause they won't be as tasty young, especially the broccoli.
