As tubers, potatoes are actually swollen rhizomes, or underground stems specialized for storing carbohydrates. The leaves photosynthesize, and the energy products are stored as carbohydrates in the tubers. These stored carbohydrates can then be used to produce the following season's new shoots. Or, they can be eaten--yum!
