Cut it down put in a dark room with ventilation stopping bud rot, 2 weeks to dry is a good drying time but the longer you dry it the better it smokes, if it is too crispy you dried it too quickly. if on flat surface and not hung up make sure you turn them so they evenly dry. In amsterdam they leave it to cure sometimes for months to give a better taste. also if you haven't cut it down yet make sure at least 80% of the pistols have turned brown this is the best time to harvest.
Sean sounds right to me. In the 70's after its was pretty dry we put it in a garbage bag with quaters of a fresh orange. After a month it wasn't too bad. But that was then, this is now.
