My grapefruit tree is oozing orangey sap from all over. The sap crystalizes when dry. What is this?

By "all over" you mean leaves and stems ? It sounds like some form of insect attack, possibly one of the citrus aphids which secrete a sticky liquid while feeding (honeydew). Check plant for insects.
