Why is our rhubarb green? Can we make it red?


Question:It tastes fine in cooking. But it's not as pretty as if it were red.

Answers:
All rhubarb is not created equal or red. I grow eight different varieties, some with green skin and green flesh, some with red skin and green flesh and some red throughout. I prefer the taste and texture of my green varieties but the nauseating green color cooked is revolting. To color it up I've used food coloring, a couple stalks of the red variety or use cranberries or strawberries for color. RScott

Rhubarb is supposwd to be green. The only red part is the bottom end of the stalk.
