Watermelons like sun. You may have a hard time with them. Tomatoes, I grew some in part shade, but the plants weren't as full. Could you put tomatoes in pots, and move them to a different area that gets sun in the afternoon?
I know nothing about collard greens, sorry.
Lettuce and beans will tolerate part shade.
Good luck!
Watermelons and tomatos are sun loving. They'll need more than morning sun. They won't die, but they won't be very productive.
Luckily, there are some veggies that like some shade. Greens, lettuce, spinach, peas, and broccoli I have found do very well on 2-3 hours of sun a day. (and any other "cool weather" crop that would croak under the heat of afternoon sun)
You're lucky it's the morning sun, more plants can handle that than the afternoon sun. I don't know about the collard greens and watermelons, but I grow tomatoes in pots in a tiny sunny spot in my yard. I can move them as the season changes and the sunny spot moves. They get about 6 hrs a day, and don't really bear very big tomatoes, but I take what I can get! I've never heard of any varieties that can produce fruit with shade only.
