Whenever you are ready to eat them, & they are big enough for you to do so. ;D Usually you can see at least some of the root at the soil surface. Carrots aren't like tomatos , or melons , that have to be ripe . You can eat them at any stage , like lettuce, cucumbers, & summer squash.

The nice thing about carrots is that you can dig 'em up and eat them at any time. If they start getting eaten by grubs, they need to come out of the ground, otherwise you can leave them until the ground is about ready to freeze.
when you pull one is it the size at the store if smaller leave longer or until your ready to eat em, which ever comes first.
