Are Ace tomatoes a good tasting variety even though they are considered low-acid? When do they mature?

Question:Also they are a determinate variety...how tall do these get?

We grew ace and really liked the taste. Maturation is 90 days. Evidently, because they are low-acid there's a concern about botulism, but that's only a problem if you're going to use a hot water bath to can them. Determinate basically means a bush variety of tomato, which usually gets no more than 4 feet tall. Indeterminates are the kind which are vining and if grown on certain systems like string, they can get up to 12 feet tall! Goodluck!
