Would a solution of vinegar & water poured over my patio kill the grass and weeds growing between the slabs?

No. Vinegar will not kill greenery. Not even full strength.

A simple solution that I have used for years is to boil a full kettle of water, and pour that between the slabs. Then let it sit for an hour or so to soak well into the root system. And then just pull them out.

You have killed the weeds and grass with the boiling water. You have loosened the root system with the wet. And once you have all the weeds and grass pulled out, if you pour more boiling water into the (now loosened) soil between the slabs, there is a very good chance that it will kill all the seeds and small root bits left behind, and you won't have to worry about anymore weeds and grass growing back for a good long while (6 to 8 weeks).

if its just the odd weed here and there i use the water that i strain from a pot of boiled potatoes as i have to be careful of weedkillers because of all the animals roaming around the garden
