Yes, I agree with the placing sweet potato in a glass of water, etc. But be sure you get a potato that hasn't been treated with a "growth inhibitor" which keeps them from sprouting in the supermarket. These will never sprout! Longer shelf life and such. Most of the larger grocery stores receive them this way. You can't tell if they have been treated by looking at them and most produce dept. workers are people who don't know squat about it unless you speak to the produce manager. (He might not know either) So, the best thing to do is buy a sweet potato from a farmers mkt, local farmer, or somewhere like that. Then proceed with the toothpicks and glass of water method Also, place the small end down into the water and be sure at least half of the potato is submerged.

Look at the sweet potato for an "eye" it looks kind of like a sprout! Cut a small piece of the potato to include the eye. Set in water. keep water in dish. it will grow roots then you can put it in dirt. Keep water fresh and don't let it dry. Rinse dirty water out and replace with clean until you can plant in dirt. It's fun and great for kids to practice with they grow quickly. Remember potatoes row under ground so give them a good sized pot! Clear would be cool to watch them grow.
If you're doing it to grow your own potatoes you'll need to use a very large container about 4 foot deep. Start rooting your potato in water simply by submerging half of it in a glass of water with pick to hold it up. once its started to root, start with about a foot of dirt in your container to put the potato in. Once you start to see the sprouts coming up, put another foot of dirt on top of that and so on and so fourth. Potatoes will form on the runners that you have built up through the levels of dirt and when you get to your last level you will have a nice vine as well. You can do this with any potato.
If you want a houseplant, stick 4 or 5 toothpicks or wooden matches in it all the way around. Set it in a glass or jar of water, so the toothpicks keep it suspended. Keep the water full, and train the vine as it grows.
Cut part of the potato off, stick tooth picks in it. Place in a container with water. Make sure you have a eye in the water. Change the water occasionally and carefully when it starts to sprout.
