Most often for cooling. In the 70's I worked in an iron foundy, like a steel mill, water was used to either harden or soften the iron. I know it sound nuts but its the truth, that's the difference between ductile iron and malleable, malleable is softer.
Where I work now thin sheets of steel are ran through roleers to make a tube and welded in one continuous line about 40 ft long. When it comes out of the welding process, it is bathed in distilled water and run through an exruder that coats it with a plastic coating. If it wasn't cooled enough the plastic wouldn't adhere to the steel.
Oh, by the way, we make broom and mop handles. So the next time you by a broom or mop, at least you know how the handle is made.
